Roasted Pina Colada

i just have one VERY serious question for you…

do you like piña coladas?  what are your thoughtsssssssss?

Roasted Pina Colada

can we take a minute to acknowledge the beauty that is THIS PERFECTLY RIPE PINEAPPLE^^^^^

YAS.

okay sorry.  i just am super loving pineapple right now.  especially on my buffalo bacon burgers.  shameless plug!  But! I bought the stuff to make those tonight for dinner so YAY!

um.  OKAY.  these drinks are not buffalo-y.  they're silky smooth and creamy and just YUM-in-a-glass.  <- my new saying FOREVER.

Roasted Pina Colada

p.s. my new knives make cutting this sucker up a BREEZE.

just like the breeze you're going to swear you feel when you take a sip of this tropical goodness.

have i finally reached the point where i'm laying it on too thick?  if so, do you like it? or should i stop?  tell me your feelings.  i'm a GREAT listener unless you're frankie talking about your day.  see also: i'm the worst.

Roasted Pina Colada

I'm pretty sure we alllll know where i stand on the piña colada train.  in the conductors car… FOR SURE.

i REALLY wanted to set out to learn how to make them at home because they're just… so lovely.  and perfect. and wonderful.  and easy to drink.

can i get you all to yell “perfect summer cocktail!”

readyyyyyy 1.. 2… 3! GO.

Roasted Pina Colada

you didn't yell… did you?

here's the thing.  cooking the pineapple was NOT my idea.  i owe this one to my lovely best friend Bianca.  when i told her i was making piña coladas, she jumped on the chance to tell me about the grilled pineapple colada-y drinks they make at her restaurant and i was SMITTEN.

like sure on the first date you're going to marry the guy smitten.

Roasted Pina Colada

the TRAVESTY of this situation is that i live in a shoebox in manhattan and don't have a grill…. WAHHHH.

i am, however, throwing a pity party in 3… 2… 1… GO.

jk. i dealt with the situation by broilingggggg the pineapple.  but if you own a grill you should totes grill it and let me know what your thoughts are!  better yet, make a batch of grilled and a batch of broiled and have a piña colada war!

Roasted Pina Colada

in case you were wondering, coconut rum is my new obsession.

i had a full out discussion with the guy at the liquor store about my confusion around which to go with bacardi or malibu.  like, probably talked to the dude for a good 20 minutes.

don't quote me here, but i believe we settled on bacardi because it was a higher alcohol content?? i'm all about the bang for my buck.

Roasted Pina Colada

think fast!  have you ever seen an ombre situation so pretty??

if you answered yes, you're a liar.

the end.

Roasted Pina Colada

good news!  even non-coconut enthusiasts love this!

also, side note: i'm slightly obsessed with coconut which has NEVER been my thing.  ever.  and now it is and i'm freaked out.  HALP.  (my favorite pitcher of margaritas is frozen coconut/strawberry… WHAT DOES THAT EVEN MEAN…. should i try to make this at home??)

Roasted Pina Colada

you didn't think you were getting through this one without a stellar pour shot did you??

i love, love, loveeeee that pitcher right now!! i'm super into the pretty spots.

RPC2

so let's just grab a glass and go on a tropical vacation.

also, pineapple is like a super good fruit for you right?? gotta label this a “health smoothie.”

show up with a pitcher of this on your mom's doorstep, because really we should be celebrating our moms everyday!
