are you tired of nut bites?  How do you feel about… nut squares?  does that make it better that I'm ALMOST sharing the exact same recipe again.

what if I PROMISED that I used a different ingredient that makes a world of difference in these guys and it's probably the only way i'll make nut bites again?

ive been lovin on my coffee lately and I saw a lara bar named cappuccino and I was like “HMMMM”

and then Frankie was like “CAN WE MAKE NUT BITES” about a bajillion + 8 times.  and then I was like “define we” and then he was like “you and me” and I was like “YOU DON-” actually nevermind you're totally over this it's fine.

basically, I was in the middle of making nut bites for this whole30 and wanted to jazz them up.  I like changing EVERYTHING.  even if a recipe is perfect I HAVE to change it.  it's in my blood or something.  seriously my blood type is A-shley-has-to-change-recipes-always.

it's essentially recipe ADD.

buttttttt it's the reason i keep coming back to you with new stuff!  because i'm always in search of my NEXT FAVORITE THING.  because there will just always be a next favorite thing.  nothing will stay my favorite thing forever.  it just… isn't possible.

BUT OKAY.  for real – these little nut squares are ammmmazing. AND still whole30 and we loved them so much we had two batches that we went through during this last whole30 and it was glorious.

OH btw.  doooo you see that crack up there ^^ in my food processing container for my ninja?

yeah i'm trying to use that crack as a reasoning for why i should buy myself a vitamix.  (as in a $650 blender that i just really really want.  if i do buy it it'll DEFF be using credit card points.  also. please talk me into it and don't try to talk me out of ittttttt.)

Espresso Nut Bites

Ingredients
  • 1 cup cashews, unsalted
  • 1 cup hazelnuts
  • 1 + 1/2 cups pitted dates
  • 1/8 cup coarsely ground coffee beans
  • 1/8 cup unsweetened cocoa
  • 1/4 cup unsweetened shredded coconut
  • 1/8 cup warm water
  • 1/2 teaspoon Himalayan pink sea salt
Instructions
  1. Combine all ingredients in a food processor and mix until there are no large chunks of nuts and the dates are almost at a paste-like consistency. It will look like a dough almost. I usually let my food processor run for about 2-3 minutes to get to this point. If it looks too crumbly, add a little more warm water and if that doesn't fix it add more dates!
  2. Grab a cookie sheet and two pieces of wax paper. Lay one of the sheets of wax paper on the cookie sheet and scoop the mixture onto the wax paper. Place the other sheet of wax paper on top of the mixture and press it down into a rectangle (I do this with either a rolling pin OR press down with a smaller cookie sheet)!
  3. Place the cookie sheet in the freezer for 20 minutes. Remove the sheet and cut the mixture into mini squares or bars! I cut wax paper into squares and use that to keep them separated while I store them in the freezer.
