so anyway.  when i was getting my pumpkin coffee from dunkin i alsoooo decided to get a pumpkin MUFFIN.

and it was…. nothing short of amazing.  and i couldn't get it out of my mind.

so i decided to make some!  but i didn't want to make my super easy 3 ingredient pumpkin muffins.  i wanted to try and recreate the spiciness of the dunkin muffins.  with the density of a slice of pumpkin bread from starbucks.

and guess what?!

i didn't achieve either.  HA.  but the muffins were really good.  and i had people over who lovedddddd them. so i figured i'd share.

they're spicy and cake-y and wonderful.

if you make them with chocolate chips and butterscotch chips and its a whole other level.  and you should definitely eat them warm.

as in.

Pumpkin Muffins

Serves: 12 muffins
Ingredients
  • 1 cup all purpose flour
  • 1/2 cup bread flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cloves
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon nutmeg
  • 2/3 cup sugar
  • 2/3 cup light packed brown sugar
  • 1 whole egg
  • 1/4 cup plain greek yogurt
  • 1 cup canned pumpkin
  • optional: dark chocolate chips & butterscotch chips
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a bowl, combine the dry ingredients (all purpose flour, bread flour, salt, baking soda, baking powder, ground cloves, pumpkin pie spice, nutmeg, sugar, & brown sugar). Use a whisk or a fork to evenly mix the dry ingredients together.
  3. In a large bowl, whisk together the egg, yogurt, and pumpkin.
  4. Slowly combine the dry ingredients into the wet ingredients, until a batter forms. If you're using the chocolate and butterscotch chips, add them into the batter.
  5. Scoop the batter into a muffin tin with cupcake/muffin liners. Fill the liners until they are about 3/4 of the way full.
  6. Bake for 20-25 minutes.
