Cut the crusts off the pieces of bread and using a rolling pin flatten them out.
Take the 1/4 cup of nutella and spread a little on each piece of bread, I did a thin layer – just enough to coat the bread. Then take the banana and THINLY slice it using a butter knife. Place the slices on top of the nutella spread. I did about six super thin slices per piece of bread.
Then carefully roll the bread from one end to the other. I used one hand to roll and the other to hold the bananas still so they didn’t just slide to the other end of the bread.
Whisk together the tablespoon of nutella, eggs, milk, and cinnamon until well combined.
Melt the butter in a skillet over medium heat. Dip each roll-up into the egg mixture to coat and then place them in the heated skillet. Cook until golden on the outsides (approximately 5 minutes) and then remove from the skillet.
Serve hot, dusted with cinnamon and sugar, with desired toppings!
