Nutella Banana French Toast Roll-Ups

Here I ammmmm with your mid- morning almost lunch delicious picture fix directly to your email… if you subscribeeeeeee.  it's actually really sad to look at these.  they were the breakfast Frankie and I had on the day before starting the whole30. 

WAHHH.  they represent everything good (or bad?) in the world – basically everything I'm not allowed to have right now (except the bananas – a girl's got some hope right?)

I gotta be real with yewz.  I got the idea for these from the facebook buzzfeed cooking videos that always show up on my newsfeed.

Does anyone else get those?  sometimes I like them, sometimes I don't.  sometimes they annoy the crap out of me. <- I clearly can't make up my mind.

french toast roll ups-10 BUT. anyway, I saw one of those videos that made French toast roll-ups using cream cheese (ew) and strawberries… which might actually sound appealing if I liked cream cheese.  YOU should make it. maybe. or I mean make these… because NUTELLA.

right now I'm on the whole 30 OBVI because I won't shut up about it.  and I'm kind of thinking about making a healthy version of nutella (and by healthy I mean just made with real ingredients).  I'm on this kick of making my own stuff right now because I basically CANT HAVE ANYTHING FROM A STINKING PACKAGE.

I digress… the point was that I think everyone knows NUTELLA trumps cream cheese every day.  ALL DAY ERRE DAY.  okay I'm embarrassing, i'll stop… maybe.

I used bananas because… I had them?  I suppose you could use strawberries instead (OR BETTER YET STRAWBERRIES AND BANANAS).  I think they'll just be a little harder to roll out.

but if we're being real, that's the hardest step.  well, that and trying not to eat all the nutella from the jar before you get that nice little schmear on those flattened out slices.

um. so. yeah. this is pretty simple.  you just take the bread, cut off the crusts (which is SO against everything I believe in – so I saved my crusts in my freezer for homemade croutons), spread a little slab of nutella on the slices, top with some thinly sliced banana, and roll them up!  from there it's just like normal French toast.  Dip it and cook it in a frying pan.  one, two, thr-DONE.

I mean COME ON.  they're gorgeous. and surprisingly easy. and TOTALLY an indulgence.  I ate three…. with real French toast I probably eat two slices.

SEEEEEE ^ you just roll them up nice and easy.  easy peasy.  I cant stop thinking about it.

the nutella/banana combo really just reminds me of crepes.  when we studied abroad I was the QUEEN of crepes.  I ate four in one day in paris.  FOUR. I hate myself too, its fine.

these are probably as close as i'll get to making my own crepes at home…. because I'm lazy and it seems like a lot of effort and I don't think i'll yield anything close to the real thing so why try, you know?

but these.  I can get on board with these.

Consider this fair warning that your kids with love them.  they'll probably want them all the time.  actually… maybe you shouldn't make them?

I'm just kidding, make them a sunday thing.  a sunday treat.  definitely have them the day before starting your whole30.  that's a smart decision.  which, btw. Nutella Banana French Toast Roll-Ups

Ingredients

  • 8 pieces sandwich bread
  • 1/4 cup + 1 tablespoon nutella
  • 1 banana
  • 2 eggs
  • 1/3 cup milk
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter
  • ground cinnamon + sugar, for dusting
  • syrup (optional, topping)

Instructions

  1. Cut the crusts off the pieces of bread and using a rolling pin flatten them out.
  2. Take the 1/4 cup of nutella and spread a little on each piece of bread, I did a thin layer – just enough to coat the bread. Then take the banana and THINLY slice it using a butter knife. Place the slices on top of the nutella spread. I did about six super thin slices per piece of bread.
  3. Then carefully roll the bread from one end to the other. I used one hand to roll and the other to hold the bananas still so they didn't just slide to the other end of the bread.
  4. Whisk together the tablespoon of nutella, eggs, milk, and cinnamon until well combined.
  5. Melt the butter in a skillet over medium heat. Dip each roll-up into the egg mixture to coat and then place them in the heated skillet. Cook until golden on the outsides (approximately 5 minutes) and then remove from the skillet.
  6. Serve hot, dusted with cinnamon and sugar, with desired toppings!
