Here's the thing. I know I'm awful at blogging regularly (unless I'm writing meaningless posts about things no one cares about like sparkly nails). But I've had this recipe ready for you guys for WEEKS. Like I wrote it down while I made the pizzas for myself so I would have NO EXCUSE not to blog about it right away..
Then it just got away from me… until I got a text from my boyfriend showing me a St. Patrick's day milk shake he made (and didn't mail me one of) accompanied by “You should watch out, I might take over your blog”
Then I was like ummmmmmmm. Wait. I suck. You'd all probably rather have Frankie write your recipes. But do you know what it would be? A blog about boozy milkshakes. The boy can't even boil water but he makes a mean smoothie. I'm sure you'd all just loveeeeeeee that.
But he can't be your favorite because, you know, I bring you really easy pizza. And my own boozy stuff. Like shots and martinis. And. and. and. I just want you to like me better, okay?
Besides, I've been coming up with some cool ideas for you, like a Cooking for One series where my recipes only yield one or two portion sizes. I was toying with the idea because nearly everything I make has leftovers for DAYS.
Don't get me wrong. Girl loves her some leftovers. But sometimes it just gets boringggggg. And there are only so many ways I can repurpose leftovers in a week before I lose my creativity.
And I have a lot of friends who are moving out on their own and living by themselves for the first time. The kitchen can seem like a scary, scary place (just ask my boyfriend). Hopefully, me designing some recipes that are quick, easy, and perfect for one or two servings will help conquer that fear.
If I can stay on task long enough to do it…
Anywho. I love these pizzas because you can literally make them in 10 minutes with any toppings you want. When I was little my dad used to make us english muffin pizzas. I started making them with tortillas in high school when we didn't have any english muffins in the house. They're the ultimate drunk food. Ultimate.
The recipe has my favorite way to make them, but lately I've been throwing green pepper, red onion, and slices of garlic on there. Yeah. That happened.
Easy Tortilla Pizza
- Prep Time: 3
- Cook Time: 7
- Total Time: 10 minutes
Ingredients
- 1 flour tortilla
- 2 tbsp pizza sauce
- 1/4 cup finely shredded mozzarella cheese
- toppings of choice (my personal favorite is just plain old pepperoni)
Instructions
- Preheat your oven to 350 degrees.
- Evenly spread pizza sauce on tortilla and sprinkle half of the cheese over the sauce. Place pepperoni, or desired pizza toppings, on the pizza and cover with remaining cheese.
- Place pizza on baking sheet and bake for approximately 7 minutes or until the edges of the tortilla turn golden brown.
