ALRIGHT SO.  are you wondering by this point, what a jam jar is?

they're the most amazing summer gin-based strawberry lemonade cocktail.  they're a copy cat recipe of the famous jacob's pickles jam jars.

it's an “i could drink this all day” cocktail.  which is my favorite kind.

what we have to do is infuse gin with strawberries.  i just used a couple of mason jars to store it, but you could really use any container.

the key to maximizing the amount of gin you can infuse is making sure you use the strawberry tops too.  I always keep the tops in a separate mason jar so that i can easily use the diced up strawberries for garnish.

but the tops are kind of the forgotten part of the fruit and they yield just as much strawberry flavor as the actual berry.

which meansss DOUBLE THE INFUSED GIN.

which can never be a bad thing.

the amazing thing about infusing gin is that it gets rid of the pine-needle-ness

which, i love the pine flavor in a gin and tonic… but it's WAY too christmas-y for me in the middle of summer

so we're gonna mellow the gin out and give it a little sweetness.

just strain out the strawberries from the infused gin and top it off with lemonade! it's soooo easy and PERFECT for a summery cocktail! | thepikeplacekitchen.com

after you stream out the strawberry bits, feel free to honestly drink the gin just over ice…

OH.  also, it's totally a great party drink.  as in make a TON of the gin and just a big batch cocktail!

jacob's pickle jam jars

Ingredients
  • for the gin
  • 1 pound of strawberries
  • 2 cups of gin
  • for the jam jars
  • lemonade (i used the premade minute made version!)
Instructions
for the gin
  1. Dice the strawberries and keep the strawberry tops separate. Grab two mason jars (or any other jar with a lid) and put the strawberry tops in one and then fill the other with the strawberry pieces. Set aside and let the strawberries infuse for at least two hours, but up to two days.
  2. After the gin is finished infusing, stream out the strawberry tops/strawberry pieces. I always save the strawberry pieces for garnish on the cocktails, but this is option.
for the jam jars
  1. Fill a mason jar with ice and pour 1/4 cup of the infused gin into the jar. Top the glass off with lemonade, approximately 3/4 cup.
