okay sorry. i just am super loving pineapple right now. especially on my buffalo bacon burgers. shameless plug! But! I bought the stuff to make those tonight for dinner so YAY!
um. OKAY. these drinks are not buffalo-y. they're silky smooth and creamy and just YUM-in-a-glass. <- my new saying FOREVER.
p.s. my new knives make cutting this sucker up a BREEZE.

here's the thing. cooking the pineapple was NOT my idea. i owe this one to my lovely best friend Bianca. when i told her i was making piña coladas, she jumped on the chance to tell me about the grilled pineapple colada-y drinks they make at her restaurant and i was SMITTEN.
like sure on the first date you're going to marry the guy smitten.
the TRAVESTY of this situation is that i live in a shoebox in manhattan and don't have a grill…. WAHHHH.
i am, however, throwing a pity party in 3… 2… 1… GO.
jk. i dealt with the situation by broilingggggg the pineapple. but if you own a grill you should totes grill it and let me know what your thoughts are! better yet, make a batch of grilled and a batch of broiled and have a piña colada war!
in case you were wondering, coconut rum is my new obsession.
i had a full out discussion with the guy at the liquor store about my confusion around which to go with bacardi or malibu. like, probably talked to the dude for a good 20 minutes.
don't quote me here, but i believe we settled on bacardi because it was a higher alcohol content?? i'm all about the bang for my buck.

also, side note: i'm slightly obsessed with coconut which has NEVER been my thing. ever. and now it is and i'm freaked out. HALP. (my favorite pitcher of margaritas is frozen coconut/strawberry… WHAT DOES THAT EVEN MEAN…. should i try to make this at home??)

show up with a pitcher of this on your mom's doorstep, because really we should be celebrating our moms everyday!
- 5 cups cubed pineapple
- 1 tablespoon brown sugar
- 1 + 1/2 cups coconut rum
- 1/4 cup pineapple juice
- 15 oz cream of coconut
- 5 cups ice
- Set the oven to broil. Spread the cubed pineapple on a baking sheet and put it under the broiler for 5-7 minutes. Sprinkle the sugar over the pineapple and return to the broiler for 1-2 minutes.
- Combine the pineapple, rum, pineapple juice, cream of coconut, and ice in a blender. Blend until ice is completely broken down.
- Enjoy with a slice of fresh pineapple on the rim!
