Boozy Oatmeal Cookie Shooters

i knowwwww what you're thinking.  “SIGN ME UP.” and i can't blame you at all.  WHO ISN'T INTO OATMEAL COOKIE SHOTS?  answer: no one.

we're going there today and it's about to be gloriousssss.  because we're also topping them with a cute little cinnamon whipped cream (and store bought oatmeal cookies because we're lazy).

but also… because i don't have an oatmeal cookie recipe i'm in love with from the internet.  

all of my favorite cookie recipes are typed up in my moms flimsy turquoise recipe binder.  they're a mixture of family and random ones she's collected over the years and its GOLD (but actually its turquoise and littered with flour and sticky sugar and memories).  i might have a secret plan to steal it while i'm home for christmas and broadcast it over the blog.

my mom always made the BEST desserts…. and drinks.  so this is like an ode to her.  and all of her awesomeness.  sort of.  but also because i heard that this combo tastes just like an oatmeal cookie and had to try it for myself.  

but um.  have you had rumchata?  better yet have you had it in a not your father's rootbeer?  if you haven't you're not living.

and I need you to liveeeeee.  live the life.  and drink the drinks. 

especially on Christmas eve.  WHAT DO YOU DO?

Christmas eve always seems more magical than Christmas to me.  I can't tell you why, but it does.  It's the one day of the year that I can count on seeing my aunt and uncle and cousins and having the BEST time.

when I was little I loved Christmas eve because of the build up.  I'd get so excited about opening my first presents of the year! but also I LOVED years when we went to their house instead of mine because it's the house my mom grew up in (and I lived in for a year when I was a wee little one) and it reminded me of my grandparents (my grandpa built it!).

but also…. we always ate… appetizers.  the whole freaking night. and it was like I was living in paradise.  I'm talking BUFFALO WINGS (um my uncle makes phenomenal wings), chicken fingers, and my personal favorite: pigs in a blanket <- I was probably the most excited for this part.  YES.

p.s. one year I'm 90% sure we had a chocolate fondue fountain…. remember when those were all the rage?  lets bring them back.  asap. (every other year we'd have mini brownies and a bajillion cookies and A JIMMY ROLL from my old place of occupation Newport Creamery – p.s. you HAVE to choose the red & green one.  its a rule)

butttttt. the night has kind of morphed as we've all gotten older.  instead of the adults hanging out and us kids playing in our playroom and annoying the heck out of them for presents… we kind of all just hang out now.  and I love it so much.  I think moving away and living soooo far from everyone made me realize how much I love spending time with my family.

plus I can drink now!  so that means I get a little tipsy off a choice cocktail of the night and then we play games and talk and there's SO MUCH laughing (mainly because my uncle cheats. at. every. game. kan jam? cheats. catch phrase? cheats. cards against humanity?  oh yeah he'll steal your cards if you're not looking.)

but we all know the best part is the signature cocktail.  right?  last year we did washington apple martinis with my FAVVVEEE regal crown apple and they were SO GOOD.  (i'm secretly hoping we'll do them again this year… but with one or two of these peppered in between!)

because these are so. freaking. good.

but to be honest, i think i enjoy them better in a whiskey glass with an ice cube as a sipping drink.  frankie liked them both ways…. he likes anything with alcohol though…

and i gotta say.  the cinnamon whipped cream?  its like the icing on the cake.  its non negotiable.

Oatmeal Cookie Shooters

Ingredients

for the shots

  • 1 part rumchata
  • 1 part fireball
  • ice, for shaking

for the cinnamon whipped cream

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 + 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Instructions

for the shots

  1. Combine the fireball and rumchata over ice in a cocktail shaker and shake to mix. Pour into individual shot glasses. Top with whipped cream and oatmeal cookies if desired.

for the whipped cream

  1. Place bowl and whisk in freezer for 10-15 minutes.
  2. After the bowl and whisk have chilled, remove them from the freezer. Pour the whipping cream into the bowl and whisk at a medium speed until soft peaks form.
  3. Add in powdered sugar, vanilla extract, and cinnamon. Continue whisking until stiff peaks form.
  4. Serve immediately or store whipped cream in the fridge for up to 10 hours.
