you guys.  its been a day.  a crazy crazy day of travel.  the silver-lining is that we're gonna talk about everything seasoning and everything baked chicken!

but ugh.  can i tell you about my day first?

first.  we missed our bus to RI by TWO MINUTES.  it was raining and our lyft driver was super slow and there was SO much traffic.  oh anddddd we stopped to get bagels before getting in the lyft which is probably why we were late.  ugh.  it was torture. 

sooooooo. we went to dunkin donuts and got REALLY disgusting ice coffee.  as per usual… and ate the bagels we brought in… because we're rebels.

then we decided to go to a bar and get a couple drinks.  because yolo.  then we tried for a second bus at 1pm… which was late and didn't leave until 1:30.  anddddd we hit TONS of traffic.

because why wouldn't we?  and our bus driver was crazy.  the good news is that I'M IN RI.  thank goodness.

i'm in RI and now i'm here to talk to you about EVERYTHING SEASONING!  because honestly it's the highlight of this post.  and if you take away any of it it should be this seasoning.  YUM.

are everything bagels your favorite?  they're totally mine.  they might be on my list of things to create for the blog soon!

so everything seasoning is like super simple to make.  and i definitely will be making some and just keeping it in my cabinet for future use.  i still have a little bit leftover from this batch of chicken actually.

the only thing i probably would add if i had it or could find it would be dried minced garlic.  i had to sub in fresh minced garlic when i was coating the chicken.  it would make it simpler to just have the garlic already dried.

so. i think we've exhausted the excitement over the seasoning itself.  wanna chat about chicken?

because chicken is my fave.  well i appreciate all meats equally… but chicken is great.

i think my favorite part of this chicken is that its like eating SUPER flavorful chicken cutlets that are gluten free!

in fact…. this recipe is totally whole30 which is super exciting!  I'm going to be keeping this in my rotation during my next whole30.

its pretty simple too.  once you have the seasoning made it's smooth sailing.  you just coat the chicken in olive oil with a little garlic and then dip it in the seasoning and bake!

healthy AND easy.  my favorite combo.  AND its something you guys asked for when we had that big convo about the blog way back.

sighhh. also, i totally served mine with roasted asparagus which are my FAVE.  do that. on the same pan –> easy cleanup!

i do have to warn you that its seriously like a flavor explosion.  frankie and I both thought it was really good, but if you're nervous about it being too intense maybe only coat one side OR use thicker chicken breasts.  the ones I had were on the thinner side, but you can definitely use thick ones to get a better flavor distribution.

Ingredients

for the seasoning

  • 2 tablespoon minced onion
  • 1 + 1/2 tablespoon caraway seeds
  • 1 + 1/2 tablespoon poppy seeds
  • 1 + 1/2 tablespoon seasame seeds
  • 1 tablespoon pink himalayan sea salt
  • 1 tablespoon ground pepper (i used multicolor!)
  • 1/2 tablespoon garlic powder

for the chicken

  • 1 pound chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic

Instructions

for the seasoning

  1. Mix together all the ingredients until well blended!

for the chicken

  1. Preheat the oven to 350 degrees.
  2. Coat the chicken in the olive oil and rub the garlic on each of the pieces of chicken.
  3. Spread the everything seasoning in a shallow dish and lay the chicken in the dish to coat. Flip to coat the other side. Place the coated chicken on a baking sheet.
  4. Bake for 20 minutes or until cooked through. Flip once halfway through the time in the oven!
