IMG_6792.JPG 1. Jamboree two weekends ago was as amazing and wonderful as I remembered.  And I now have a woman crush wednesday fo' lyfe: Miranda.  She was AMAZING.  so incredibly good. 

2. Am I the only person in the world who will get a free book from iBooks and not be able to stop reading it no matter how crappy it is?  It's an addiction I think.  Do they have a rehab for this?  Should I go?  WHAT DO I DO??  I just really get my hopes up that maybe, just maybe the author will surprise me with a twist ending that I never saw coming and I'll get giddy and feel bad for bashing the book the entire way through.  Buttttt I'm reading crappy romance novels that always end the same way.  So really I'm just spending my time trying to figure out HOW the author is going to get their characters back together after their big fight.  This point has continued on for way too long, I'm realizing this now.  

3.  Yesterday a guy buzzed my apartment because he found my license on the street and didn't want me to have to spend the money getting a new one.  I thought I had lost it on an airplane but really I just dropped it on the side walk.  SO nice of him.  He didn't want anything in return he just dropped it off and went on his way.  And don't worry about my safety, I didn't let him up… I walked down and grabbed it from him.

4.  I'm FINALLY going to watch divergent this week.  I bought it already (assuming I'm going to like it/it was on sale at target for $20 for the blu-ray/dvd/online version with bonus stuff…. target wins again).

5.  I found out something cool this week that I'm actually REALLY excited about.  I can run a full mile.  I thought I couldn't but turns out I can.  I had always read articles about how all you have to do is slow it down, but I was always like “wahhhhh I can't run a 10 minute mile.”  Turns out if I slow it down to a 13 minute pace I DO have the endurance.  Who would have thought?  Caitlyn will be so proud.  

6.  Mistresses | Blew. my. mind. this. week.  Daniel works for the FBI, WHAT?  WHATTTT?!  That's not a thing.  Also, can Harry and Joss just do it already?  I've literally been waiting since season 1 when I secretly told myself they'd be perfect together but knew it would never happen.  Right about now that's the only show I'm watching “regularly.”  I'm trashing it up by watching all the Kardashians shows/Awkward on netflix/hulu.  But I am going to start making my way through Sons of Anarchy.  Despite my boyfriend whining claiming that I'll never actually watch it (he still resents me for giving up on the vampire diaries/teen wolf).  

7.  My favorite breakfast right now is a little bit of Ellenos greek yogurt whipped with honey + sliced grapes + Bear Naked vanilla almond granola.  I can't even.  Ellenos is located in the Pike Place Market and if you ever stop by you should DEF try some. (yes, they do free samples)  

8.  Also, this week I FINALLY had photos featured on foodgawker and tastespotting!  I haven't been on top of my game with submitting photos (or this blog in general lately) but I'm getting back into a groove and it feels nice. 

9.  Unless you live under a stupid rock (Youtube vid reference), you've seen the ALS ice bucket challenge videos.  My grandma died of ALS when I was 14 and I really don't like to talk about it much because I was really close to her.  She was the most active and full-of-life person I knew and watching her get sick was incredibly traumatic for me.  She couldn't talk, couldn't walk, couldn't feed herself.  My step-grandfather would sit by her and turn pages in a book for her so she could read (she's who I get my love of all things books and writing from).  There's a lot of talk about how it's “not a challenge” or it's not really “doing anything,” but it's doing something for me.  Most people didn't know what ALS was before the challenge started in July.  It's raising awareness.  Even if people aren't donating (which they are, according to the foundations), at least it's in the back of their minds and they know about it now.  So I want to say thank you, to everyone who is giving support.  It means a lot personally.  I appreciate it and I appreciate you.

11. Also: Disney & Robin Williams.  Did you know they were playing Aladdin this weekend WITHOUT commercials?  I don't have cable so I didn't watch, but I have to say touché Disney.  Class act.

Simple & Light Arugula Salad

 This year I've just been IN LOVE with arugula.  As in I want to eat ALL of the arugula.  Hence my obsession with this arugula salad.

Because, you know, it's the best thing since sliced bread…. although I like my bread in a loaf that I can slice myself.  It's the best thing since bread.  I'm a huge fan of hyperboles.  In case you couldn't tell.

But like really.  Arugula is just. so. peppery.  It's my favorite of the leafy greens.  Which I've been trying to eat more of… Because… nutrients?  vitamins?  everyone tells me they're good for me?

You and I should face the serious reality though.  Arugula is the sexiest lettuce/green.  It's an aphrodisiac so don't even argue with me.  It's way sexier than its ugly cousin Iceberg.  What kind of a name even is that anyway?  Sorry getting off topic.  (And I'm sorry Iceberg, we're still friends and I still eat you on the reg but you're just not as cute.)

I love this embarrassingly easy salad because it. is. so. fresh.  So fresh, so clean.  Oh yeah.  Just some EVOO (I'm channeling Rachel Ray) and a squeezy squeezy of lemon. and BAM you're good to go. 

I will say that if you're not making a big batch for an entire family mix the “dressing” separately and pour it on individual salAHds on your own time.  Savor it all week.  Know what I'm sayin?  No?  Have I completely lost you?  Probably.  I've lost myself.

I made this salad for a cookout at Deb's house like months ago and it was delish.  I've been dreaming about it ever since, but haven't been home long enough to actually go through a thing of arugula again.  But when I got home from Jamboree on Monday I marched down to Frank's Produce in the market and said “YOU GIVE ME ARUGULA” and walked away.  Not really, but pretty close. 

It seems like the PERFECT way to detox after consuming the following four things over jamboree: hot dogs, turkey/ham sandwiches, tacos, and alcohol.  (Lots and lots of alcohol.)

I keep describing it as “light” but I really can't think of a better word to describe it.  Grill up some chicken and throw it on there for a complete meal… or throw some quinoa on there to give it a little protein boost… or you could always just dive head first into the bowl and bask in the glory of only eating this for the rest of your life.  Your choice.  As always, no judgement.

Simple & Light Arugula Salad

Ingredients

  • 1 bunch of arugula
  • 1 lemon
  • 1/4 cup olive oil

Instructions

  1. Cut the ends off the arugula to separate if your bunch wasn't pre-separated. Rinse and dry the greens before transferring to a large salad bowl.
  2. Drizzle the olive oil and squeeze the juice from the lemon over the leaves. Toss to coat.
  3. Serve immediately.

{I Can’t Believe It’s Been So Long} Things

1. Holy woah.  TWO WHOLE MONTHS.  I'VE BEEN GONE FOR TWO WHOLE MONTHS.  I have no excuses.  I've been spending a lot of time focusing on me and what I want.  And dealing with a ton of work ish & family ish & stuff that has just left me duh-rained.  I've had a bunch of recipes queued up since I was last here and I just didn't have the energy or drive to edit the pictures.  Wah.  I'm sorry.

2. Earlier this month I was home for TWO weeks.  TWO WHOLE WEEKS.  It was amazing and everything I needed to get myself back in check.  Weirdly enough, I actually love spending time with my boyfriend.

3.  Yesterday my coworker told me about a nice “3 mile run” in the area.  What he really meant was a 2 mile run and 1 mile hike up a freaking mountain {read: steep hill}.  I died.  It was 97 degrees out.  I'm literally dead.  

4.  Um have you guys watched the 50 shades of grey trailer?  and the mockingjay trailer?  swoon city over here. So. Excited.

5. I've been doing this thing where I'm going to bed at 10pm.  Does that make me a grandma?  Yes.  Do I care? No.  I love it.  It's glorious.  

6. Is it weird that I want to go on a run and listen to this podcast by my favorite {read: spirit} blogger?  Probably.  Also, I preordered her book and am pretty FREAKING excited to submit for a signed book plate.  ugh.  Also, her pregnancy announcement?  So. Freaking. Cute.  Can I just be her?

7. I'm also utterly obsessed with this stromboli right now.  And Bev's twins.  Cause honestly if Will's hair DOESN'T make you want to cry that-baby-is-so-adorable tears then you aren't human.

8. Frankie and I took this test when we were driving from lil ‘Rhody to Lawng EYEland.  I think I got 27 and he got 23.  we're ashamed.  It's fine.  (Spoiler: he DEFF owns boat shoes.)

9. Also, I'm ashamed to say that we had a conversation about how neither of us knew what “turn down for what” meant.  The only things I could come up with to explain it were: (1) turning down the radio -> therefore stopping partying or (2) “turning down” the bed, like when you get turn down service at a fancy hotel?  Shoot me.  We had to look it up on urban dictionary.  <- we are officially old.

10. OREGON JAMBOREE PART II THIS WEEKEND.  UGH I literally CAN NOT wait.  Tim McGraw, Miranda Lambert, Jake Owen, Billy Currington, Eli Young Band, Blackjack Billy.  Give me all the camo.  ALL OF IT.

11. This has been fun.  Let's do it again sometime.  Maybe.

Memorial Day Weekend Things

20140529-103531-38131713.jpg 1.  How was your Memorial Day?  I was off the grid on all the social medias, holed up inside a tent with three friends in the forest on an island.  Oh yeah.  We camped in Moran State Park on Orcas Island and it was wonderful, although I'll NEVER. EVER. EVER. do that on a holiday weekend again.  SO. MUCH. FERRY. TRAFFIC.  Like, so much traffic I thought I was seriously losing my mind a few times. 

2.  Did I talk to you about Dutch Brothers last week?  I honestly can't remember.  I should check.  But I'm already invested in this so I'm gonna keep going.  I love love love them.  Like a lot.  Like they're my new fave CAWfee place.  I just can't get over their caramelizer/double choco mocha.  Like whaaaatttt?  how many times did I say “like”?  That's how much I like this place. 

3.  The other day I wanted to remove some chipped nail polish and I was traveling and I thought to myself: “Self, someone should invent travel/to-go nail polish remover.  Like little pads soaked in nail polish that you can use when you're in the car or in an elevator or dancing on the sidewalk.  IIIIIIIIIIIIIII should invent that, I'd make millions.  It's so simple I can't believe no one has done it yet!”  Then I went to walmart… they have invented it.  which was lovely at the time because it was precisely what I needed at the moment; but, also really sad because someone basically stole my millions of dollars for inventing it.  womp womp.  and so goes the American Dream.

4.  I don't know why I'm so focused on coffee right now, but when I lived in Florence the only place that sold Iced Coffee was a cafe/club called Astor.  They had a coffee card for 30 euros and you could get an unlimited amounts of coffee drinks for a full month.  it was amazing.  The reason I'm telling you this is because I'm really craving this frozen coffee drink that was swirled with chocolate and banana syrup and topped with whipped cream and just ohmahgawd.  can i have ittttttttt?  CAN III.  i need it in my life.  again. 

5.  YEW GUIZ.  I get to be home this weekend.  WHHHhhhhhAAAAaaT?  i know.  it's gettin cray.  I'm going to sit in my kitchen and just stare at the appliances.  Like the ninja mega kitchen system that I talked about FOREVER ago and my momma listened and bought for me for my birfffdayy.  <- lady of the year right thur, right thur.

6.  Speaking of appliances, my dishwasher has been broken for weeks.  WEEKS.  I just don't have the energy to go tell my building manager/I haven't been home & needing to use it so it doesn't really impact me.  but this weekend it will.  When I make ALL the things and have to wash ALL the dishes by hand <- a food blogger's nightmare.  womp womp.

9.  So many birfdays:  Happy birthday tooooo my brother, my cousin, and my seattle bff!

Wednesday Things

A few of my favorite things 1.  I'm fifteen and obsessed with glitter manis.  What the hell is wrong with me?  It's so much worse than you think… I actually need to restrain myself from going to the nearest store and buying myself some pink glitter nail polish… because that's clearly what is necessary and important in my life.

2.  Hai.  I went to Vegas last weekend and it was wonderful.  I sat outside in the sun and got tan and went swimming and drank frozen drinks and won money playing blackjack and slots.  I saw Britney Spears (who looks ahMAZing btw) and bought a shirt that says “It's Vegas Bitch.”  I cried when I left, not because I didn't want to leave Vegas, but because I didn't want to say goodbye to my mom.

3.  Being a grown up is the worst.  You move out/away and pay your own bills and have a gazillion dollars in student debt and have to pay attention to how you treat your body and life becomes real. 

4.  But I'm not so much of a grown up that I'm against eating hotdogs for every meal for an entire weekend straight.  Which just happens to be my memorial day weekend plan if the rain doesn't ruin my plans of camping on Orcas Island all weekend.  I might eat a few different things… maybe. 

5.  Also, I may just be the trashiest person I know.  I went to walmart to buy Sun-In (because target is too classy to carry it) so that I could lighten my hair without needing to pay $1,000,000 for highlights.  My hair dresser/second mother would be appaled, but I'm fairly certain she doesn't read this/know it exists. 

6.  And in case you were wondering, yes I did use it in Vegas and yes my hair IS a billion times lighter. 

7.  I'm on this huge kick of doing things that make you happy.  Creating your own happiness.  I feel like a lot of times we sit around and wait for happiness to happen TO us instead of making it happen.  I don't want to be that person anymore.  I think I need to make a vision board.

8.  This whole creating my own happiness thing is starting with a whole week at home in July.  I'm heading home for a week with family/friends and time with my boyfriend.  It's something I've been wanting to do but felt like I needed to save up my leave and now I'm just going for it.    

9.  The picture up top?  It a few of my favorite things right now.  UM.  yeah my macbook & kate spade case obvi.  the camelbak insulated filtering water bottle…. LOVE.  I have two of the brita ones that I also really like, but this one is amazing guys.  but really.  finally:  my cordito.  my new fave travel accessory.  I'm really kicking myself in the butt for not buying the cord tacos.  WHAT WAS I THINKING.  

10.  I'm dead without Nashville.  dead I tell you.  other than that, I haven't been watching much TV!  Do I have a fever?  Never fear, mistresses comes back on in a week or so and the new Orange is the New Black season comes out on the 6th I think and I still have a bajillion shows that i have on my list of shows to watch/get caught up on I'm just toooooo (say it with me) busy.  – I'm a broken record.
