What I Ate Wednesday: NY & RI

I can't believe another week has gone by.  It's crazy… time is flying by and the summer is practically over.  I want to curl into a ball and cry: COME BACK, I'M NOT READY FOR YOU TO LEAVE.  And that is how I feel.  Anywhoooo.  It's another Wednesday which means it's a Peas and Crayons linkup day!

I'm still on the road (in Utah) and I figured you were probably getting tired of the traveling editions.  So, I'm going to go a little crazy this week.  This is What I Ate When I Went to New York & Rhode Island for the Weekend (what a mouthful… pun intended):

 New York

I landed in New York late on Thursday night and Frankie's mom had made us taco stuff.  I was too hungry to remember to snap a picture.  One thing I always HAVE to have when I'm in New York is a bagel.  Duh.  I got an everything bagel and a cinnamon apple coffee.  The cutie in the driver's seat is my amazing boyfriend driving us to Rhode Island while I ate breakfast :)  We grabbed stuff from Lynbrook Bagels before embarking on our “road trip.”

When I was back in New York later in the weekend we got a slice of pizza and some garlic knots.  Nom nom.  It was like the universe was telling me it was IMPOSSIBLE to not get pizza when I'm in New York, we tried 3 different deli places that were all closed before settling on Sa Vino's.  We also had a “date night” in New York, which I'll get to later.

Rhode Island

Rhode Island Food When we finally got into Rhode Island (after a 5 hour drive that normally takes 3.5ish) my mom had a bunch of food set up for us and my friends who came to visit me.  I can't remember what she said was on the chicken but ohmahgawd it was addicting… I'm pretty sure no one else got any… oops.

If you're not from Rhode Island you're probably looking at that pizza like what the hell is that?!  It's called bakery pizza or pizza strips or party pizza.  It's a “Rhode Island thing,” and you can find it in almost all of our bakeries.  It's served cold and without cheese (the white one has cheese but that's not traditional bakery pizza… still amazing though).  We always have it at parties as a picky food.  The white one had onions, peppers, and hot peppers if I remember correctly.

Rhode Island Drinks What was I drinking?  Apple ginger vodka with ginger ale. New. Favorite. Drink.  Sangria (I forgot to snap a picture… but my mom's famous amoung my friends for her sangria).  And the best pudding shots I've ever had.  She put UV cake vodka in with vanilla pudding mix and cool whip and it literally tasted like cake batter… lethal cake batter. 

I also had lunch with my dad at a local Italian place.  I felt adventurous and tried some of his lobster and snail salad.  I wasn't a fan of the snail salad, but I liked the lobster!  It was his birthday on Monday!  Happy Birthday Daddy!

We had to stop at Marylou's to pick up a couple pounds of milky wey coffee for Frankie's mom… I obviously needed an iced chocolate peanut butter coffee.  Duh.

 On Sunday, Frankie and I had a date night at a hibachi restaurant called Kashi… aww so cute right?  Except the fact that we were put at a table with an entire class of 8th grade girls celebrating a birthday.  We made the best of it and ordered a scorpion bowl ;)

I decided to continue my adventurous streak and order sushi.  We split the tuna cucumber roll and I actually liked it!

 For our meals, I ordered the chicken entree and Frankie got the steak/chicken combo.  I ate the shrimp that came with mine too!  I was on a seafood streak… I don't know what's happening to me!

WIAW: A Traveling Edition #2

I'm back in action for your favorite day of the week: What I Ate Wednesdayhen I Traveled for Work Last Week.

Because it appears I am incapable of photographing a full day of meals on the road, I've got another weekly traveling edition for you.  Nothing fancy, just a typical week in Layton, Utah.  Check back with Jenn for some better WIAWs.  

This week I went over to Super Target to get my groceries/meals for the week.  Love me a good suburban Tarjay (I hate myself a little more every time I write a blog post).

So.  The hotel I stayed at had nutella (which I am very possibly obsessed with after my semester abroad to Italia).  It was OBVIOUSLY necessary to slather some of that on top of some peanut butter and toast… heart attack waiting to happen (but so sinfully delicious).  It doesn't look appetizing but ohmahgawd it was good.

Let's talk leftovers real quick, because mine were out of this world.  Over the weekend Ryan took me to Pei Wei for chinese.  I got the Dan Dan noodles with chicken and it was ahmazing.  Super yummy.  I had the leftovers for lunch along with some of the things you'll see below for dinnahs (imagine that in a thick Rhode Island accent #you'rewelcome).

As you can probably tell, I really love the Archer Farms brand.  At Target I picked up a 4 piece container of fried chicken (which I ended up just pulling all apart to make my life easier when dividing up the portion sizes), szechuan style green beans, cilantro lime rice with corn, potato wedges, and a sesame teriyaki noodle bowl.  I ended up dividing everything except the noodle bowl into five different meals (which cut down the portion sizes and maximized the meals/$).  I wasn't a big fan of the noodle bowl, if I'm being honest, but it was my own fault really for not realizing it contained mushrooms.  You live and you learn to read labels more carefully.

Have you kids heard about these?  Apparently they're the new big thing.  I heard about them from the Bloggess.  And now I'm obsessed.  I'm like 99% sure its similar to the placebo effect and I just think they work so they work for me… but oh well.  I liked all the flavors you see above.  The NeuroSun one was kind of weird though, it tasted almost like a Pina Colada… it was good, just not what I was expecting.  But it DEFINITELY made me feel like I was on the beach somewhere soaking up those rays of Vitamin D… If only.

Dry Cucumber Soda

Guess who's still getting her butt kicked by grad school?  This girl.  I didn't have time last night to write up a WIAW post (I know you're all crying not knowing what I ate, I'd give you a tissue if I had one) and its been a while since I posted a recipe.  You are forewarned that this is a cop-out. 

I feel almost silly posting this.

I had been debating purchasing a SodaStream for quite some time.  The other day I finally broke down (I'm going to blame the heat in Seattle messing with my mind) and bought one.  I marched my butt over to Bed Bath and Beyond, 20% off coupon in hand, and did a little happy dance when I realized the model I wanted was on sale.  Let's not forget that sale really means practically free in Ashleyland.

So I got home and was like: MUST. CARBONATE. ALL. THE. THINGS.  Except I didn't.  Because I fell in love with my first creation.

I don't even know if it's legal to call this a creation?  Let me break it down for you: cucumber + H2O + CO2 = nomnomnom <- technical terms. 

I'm assuming it would taste something like this?  I love these sodas, but I've never tried the cucumber flavor so I'm unsure.

There are some “warnings” (read: ABSOLUTELY DO NOT DO THIS SIGNS) that I ignored  (obviously) that said not to carbonate anything but pure water.  Who reads those things anyway?  If you're concerned, the only consolation I can offer is that mine didn't explode?  If yours explodes please don't sue me.

Also, even if it does explode the result is totally worth it… hydrating, delicious, and dare I say… healthy?  Oh yes.  I researched (read: googled) it.  There's nothing wrong with a little CO2, baby.  It's equally as good for you as drinking plain water… but funner… and fancier.  Your friends be like: WHY U SO FANCIEEEEEE?  And you be all:  gurrrrlllll/homieee, please. and then brush that imaginary lint off your shoulder.  Oh yeah.

Dry Cucumber Soda

A quick, refreshing, all-natural and sugar-free soda.

Ingredients

  • 1 whole cucumber
  • 2 liters water

Instructions

  1. Rinse the cucumber and slice it leaving the skin on. Place the slices into a pitcher or the bottom of a Brita if you like to filter your water. Fill the pitcher or Brita with water and let sit in the refrigerator for at least one hour (you can allow the cucumber to infuse the water for up to 24 hours depending on how strong you want the cucumber flavor).
  2. Pour cucumber infused water into SodaStream bottle and carbonate to your personal preference.

Notes

  • A SodaStream (or other carbonation system) is required for this recipe.

1.  I'm heading out to Salt Lake City for the weekend to hang out with my friend Ryan.  Shenanigans.

2.  I know you probably noticed my 2 week hiatus… I'm still deciding on whether or not I want to write a post about Cory Monteith's death.  Only a few people know how deep my love of Cory & glee went.  I don't know, I might write something about it.. but I've been upset and that's one of the reason's I've been gonzo.  

3.  I'm trying out Lightroom 5 for my picture editing… my free trial is for thirty days, we'll see if I want to keep it.  Do you guys have any tips for using it?  I need all the help I can get.

4.  I accidentally forgot my workout shorts this week so I made my way to the pool/whirlpool every night which was super nice and relaxing.

5.  Grad school is sort of overwhelming.  It's a lot more intense than I expected for an online program.  There's a lot required.  Know who's happy she still has girl scout cookies?  This girl.  I spent all day on Sunday in my office working on my first paper… literally ALL day.  After I was done I obviously needed a glass of wine.

6.  Fun Fact: I know these girls!  This is a super cute segment on a fitness adventure some of my friends from high school did!  Hi Chels, Holly, & Nicole!  I LOVE paddle boarding.  Like LOVE it.  Do you remember last year when I went and was AMAZED that I didn't fall?  If I can do it that means ANYONE can do it.  Seriously though.  Subscribe to Chelsea's youtube channel.. pretty please?  I swear she's awesome.

7.  While I'm on the subject of pimping out my friends.  One of my best friends from highschool, Katie, started this super cool blog with a really interesting idea.  She found and bought this box of 100+ handwritten letters and shes sorting through them and writing about them!  I just find it super interesting and you might too.  Show her some love!  Also, another friend from highschool made this instagram for her new french bulldog puppy and I'm OBSESSED.  like I can't stop awwing and oohing and watching the videos over and over and over again.  It'll brighten your day, I swear.  #CeasartheSP

8.  I couldn't stop laughing at this, specifically Ariel's hair in the wind.  I'm also REALLY trying to be mature about this… but let's be real it's too hard to be an adult.  Also this poor guy… it would happen to me.

9.  Last weekend I woke up and didn't want to get out of bed.  Like I laid in bed for probably a good 30 minutes then I thought about how I could have bacon on a bagel for breakfast and it was like instant awake-ness.  I was in the kitchen in like two seconds.  And fyi it was totally worth it.

WIAW: A Traveling Edition

Do you guys travel like I do for work?  I'm seriously going to be in my apartment for like 3 days over the next month… I'm not exaggerating.

When you spend so much time living out of suitcases in different hotels in little towns it's pretty easy to get off track with your eating habits.  Fast food stops are a regular occurrence on travel days and every other day it's easy to fall into the trap of eating out with all of my co-workers.  I have to really work at eating well on the road and honestly, I'm not that good at it.  This What I Ate Wednesday is a compilation of some of the things I ate on the road last week when I was trying to stay healthy. 

I made my way to a Safeway to stock up for meals.  Make sure you always check to see if your hotel has a fridge/microwave in your room before you go shopping.  One time I had to leave stuff in the hotel fridge because they didn't have individual ones, which is fine but not the most ideal situation.

 This Banana Bread Granola I had for breakfast one day was from Laura's Nature Box.  Have you heard of them?  It's pretty cool.  They ship you a box each month with like 5 or 6 snacks in it to try.  I can't vouch for everything because I don't have one of my own, but I've been reaping the benefits like the good friend I am ;)  I obviously had to grab my Starbucks in the morning as well (I think this was a grande iced toffee nut latte?).  Normally on the road I'll just grab two pieces of peanut butter toast with a banana in the morning for breakfast (not that different from my breakfasts at home).

Remember when I told you guys to check to make sure they have a fridge in your hotel room?  Well this week my fridge froze like EVERYTHING I put in it which was annoying.  But I really love these salad bowls from Safeway.  They are low in calories and they come with everything you could need to eat it, like a fork.  I usually don't use all the dressing anyway so it's even better for me!  But the asian chicken one is my fave.  I've also seen salads like these at Target so I'm sure they sell them all over the place.  I also brought in some of the stuff I'm featuring for dinners below for lunch on a couple days.

I'm just really proud of my dinners.  SO. I bought a rotisserie chicken from Safeway along with a HUGE frozen bag of broccoli (Jenn would be so proud), a cup o'noodles, and side of herbed potatoes.  Throw them all together for a killer dinner in your microwave all week.  It was super good.

I'm honestly from the religion that believes you can never have too much sugar.  Because of the Starbucks Treat Receipt promo going on right now I'm ALL about going to get myself some caffeine in the afternoon.  Whipped cream?  Don't mind if I do.  Not healthy but necessary for sanity.  Also, I told you I was awful at staying healthy all the time.  The Doubletree's cookies are famous.  That means I needed to have one… every. single. night.  And let's face it.  If I'm on the road this much I can't be expected to forego the local breweries for the sake of calorie limits.  We loved and hated some of the beers at Venti's.  And overall the food there was pretty good.  Don't worry… I'm planning on writing a review soon.
